Home Cooking Party at Rei’s Part 2!

For the main course, we made ”Tai” (sea bream), a whitemeat fish, baked ”en papillote” or in a paper envelope. The fish is hard to see, but it is smack dab in the center and covered with red onions. The fish was stuffed with lemons and fresh herbs and was very fragrant. It is surrounded by cous-cous and garnished with zucchini, cherry tomatoes and artichokes, drizzled with a fine dry white wine and baked in an oven for 30 minutes.

The resulting product was a light, moist, extremely flavorful fish with a steamed cous-cous that had absorbed the juices and flavors of the fish.

Home Cooking Party at Rei’s Part 2! For Appetizers we put out some home-baked Brazilian ”Pao de Queijo” or ”Cheese Rolls”.

These puppies are usually made of tapioca starch and parmesan cheese, but I made mine out of Japanese mochi rice flour. I also used genuine, certified Parmigiano-Reggiano cheese, so the flavor was incredibly rich and savory. These were undoubtedly the biggest hit of the evening.
